Our spectacular exhibit galleries can accommodate groups of up to 2,500. Choose a strolling dinner for an engaging opportunity to mix and mingle with your guests and explore the many facets of our exhibits, or a sit-down dinner for a more intimate and immersive experience with your favorite gallery. The Open Sea Galleries

Sit by the Aquarium's largest exhibit—a mysterious and mesmerizing world where tunas and sharks speed past, sardines swirl in huge, glittering schools, and sea turtles swim lazily across the 90-foot window. For an enchanted evening, enjoy a strolling dinner in the Open Sea galleries and drift away with the jellies.

The Ocean's Edge Galleries and Marine Mammal Gallery

Dine beside the awe-inspiring Kelp Forest exhibit for a diver's-eye view of sardines, leopard sharks, wolf-eels and a host of other fishes as they weave through swaying fronds of kelp, just like they do in the wild. Or experience the elegance of the Marine Mammal Gallery where spectacular life-size models of dolphins and whales swim overhead. You can also choose to sit by the Great Tide Pool doors, where you'll enjoy breathtaking views of Monterey Bay; then step outside to watch sea life, a sunset or stars from our Great Tide Pool deck. For a strolling event, explore the Kelp Forest, coastal wetlands, and rocky shores and the kaleidoscope of creatures that call Monterey Bay home.

The spectacular wrap-around windows in our restaurant and cafe look out on Monterey Bay, home to sea otters, harbor seals and sea lions. You may even spot dolphins and whales as they cruise by.

Kelp Forest Dive Show

20-minute program
A Narrator will introduce the animals and diver in our breathtaking three-story Kelp Forest exhibit during this interactive underwater program. Using a high-tech dive mask, our diver talks directly to the crowd, sharing in-the-moment details about leopard sharks, wolf-eels and a host of other fishes as they swim past your eyes. Have something special to say? Our diver will hold a personalized sign for your guests to see!

Bat Ray Experience

20-minute program
Feed or pet these gentle members of the shark family as they swim gracefully by flapping their batlike wings. Learn about bat ray behavior, biology and natural history from our guide.

Meet Our Chef



Matthew Beaudin

Matthew Beaudin

Executive Chef

At the Restaurant, our executive chef, Matthew Beaudin, has crafted a menu featuring seasonal flavors and sustainable, farm-to-table cuisine.


After earning his associate degree in culinary arts from the Culinary Institute of America, Matthew Beaudin fiercely pursued his passion for cooking by working across the globe, holding chef positions in the Caribbean, China, Rwanda and the West Indies, as well as each geographical food region within the United States. Matthew has run kitchens at jungle base camps, on private islands and at restaurants perched 10,000 feet up the side of a volcano. He began his commitment to sustainability and culinary education during his work in the village of Musanze in Rwanda. He continues to maintain strong ties with the community through his School for the Arts (The Volcano Arts Studio).

Influenced by his travels, Matthew honed his techniques and expertise back home in the United States at such prestigious five-star, five-diamond properties as the Omni Mount Washington Resort in Bretton Woods, New Hampshire; The Broadmoor Hotel in Colorado Springs, Colorado; and The Ritz-Carlton in Sarasota, Florida. His experiences have enabled him to acquire a well-rounded palate, mixing his global travels with modern American cuisine deeply rooted in farm-to-table principles and the ever-increasing importance of food with a future.

In addition to the daily demands of his position as executive chef at the Monterey Bay Aquarium, Matthew finds joy and fulfillment in travelling to Mexico where he has the privilege of working with children at local orphanages, such as Casa Eunime, as well as the School for the Deaf. He is also currently working with municipal operations to improve the nutritional opportunities and quality of life for these children.
